Characters with character

Recent events have reminded me that more than anything else, I wanted my children to be good, kind people. Beauty is superficial, fleeting and of little value. Brains, talent and ambition are admirable, but in the absence of humility, compassion and generousity are meaningless.  As it turns out, my children are beautiful, smart, talented and ambitious but more importantly they are also loving, kind, compassionate, and generous. They walk (or perhaps slide) across valleys of volcanic rock to help others or sit by a friend’s side in an emergency room half of the night.  When God asks me what I have given back to the world, I can proudly point them.

After reading a draft of Highland Solution, due to be released in September 2013, my dad asked me where I got the idea for the story. I told him that the plot for this novel, along with the others that are in development have been floating around in my head for years. He didn’t ask me where the characters came from.  They too have been in my imagination for a long time. In fact, Katherine, the heroine of Highland Solution, has been there since before I had children. I realize now that I instilled the same values in Katherine’s character that, years later, I worked to develop in my children.

Therefore, I guess it is no coincidence that there are similarities between my heros and heroines and the people in my life who I love and admire but in some cases, I’m not sure which came first.

Still have turkey left?

I just used the last bits of the bird to make this spicy Mulligatawny soup.

Mulligatawny Soup

2 tablespoons butter

1 medium onion diced

5 cloves garlic, chopped fine

1 tart apple diced

1 medium carrot diced

1/4 flour

1 tablespoon curry powder or 2 tablespoons curry paste

1 teaspoon cumin

1/4 teaspoon cloves

1/4 teaspoon cinnamon

1/2 teaspoon ginger

1/8 teaspoon nutmeg

1/2 teaspoon ground cardamom

1 crushed bay leave

1 teaspoon black pepper

1/2 teaspoon salt (salt to taste)

5 cups chicken broth

2 cups diced cooked turkey or chicken

1 cup coconut milk

1/4 cup lemon juice

1 Tablespoon sugar

1/2 teaspoon grated lemon zest

1 can (15 ounce) black beans, drained and rinsed

Melt butter in a large pot. When it is hot, add onion, garlic and salt and saute about 3 minutes. Add, apples and carrots and saute about 5 more minutes.

Sprinkle spices over sauteed vegetables and stir until coated. Sprinkle flour over mixture. Stir and cook about 2 minutes.

Slowly add broth, while stirring. Bring to boil and simmer 10 minutes.

Add all remaining ingredients, return to simmer and cook about 10 more minutes.

Substitutions –

  1. You can start with raw diced chicken or turkey and saute first adding the onions after the meat is fully cooked and following the recipe from there.
  2. You can add 1 1/2 cups of cooked rice instead of black beans.
  3. You can add 1  1/2 cups of pureed cooked winter squash (you may need to increase the salt and/or curry powder to adjust for the increased volume).
  4. You can add 1 cup of half and half instead of coconut milk.

What to do with the left-overs?

My mom used to make this with Thanksgiving or Christmas leftovers when I was little. Since a guest surprised us with a fantastic ham to pair with our Thanksgiving turkey yesterday, this has black-friday dinner written all over it. 🙂 Enjoy.

Swiss Turkey Ham Bake

2 tablespoons butter

½ cup chopped onion

2 cups sliced fresh mushrooms

2 tablespoons all-purpose flour

½ teaspoon salt

½ teaspoon pepper

1 cup half and half (or milk)

¼ cup dry sherry or white wine

1 C cubed cooked ham

2 cups cooked turkey cubed

1 5 oz can water chestnuts sliced thin

½ cup shredded Swiss cheese

1 ½ C bread crumbs

3 tablespoons butter melted

Preheat oven to 400º.  Sauté onion and mushrooms in 2 tablespoons of butter. Blend in flour and add salt and pepper.  Add cream and sherry.  Cook and stir until thickened. Add ham, turkey and water chestnuts.  Pour into a 1 ½ qt baking dish.  Top with cheese.  Mix bread crumbs with melted butter and sprinkle over casserole.  Bake for 25 minutes, until lightly browned.  Makes 6 servings.

Happy Thanksgiving

I love Thankgiving! The standard core of Thanksgiving food, Turkey, dressing, mashed potatoes, gravy, green beans and corn are among my family’s favorites. When my kids were younger and I worked too many hours one of our favorite meals was the 15 minute Thanksgiving. I bought turkey breast cutlets, Stovetop stuffing, Bob Evan’s mashed potatoes, a jar of gravy, Green Giant canned greenbeans and Niblets corn. I sauteed the turkey cutlets, adding the gravy to the pan after the turkey was cooked, made the Stovetop stuffing and heated everything else in the microwave.

While nothing can compare to the aroma of a slow roasting Turkey or a pumpkin pie baking, the 15 minute Thanksgiving was festive in its own way and gave us a little reminder of one of our favorite holiday meals in the middle of an otherwise ordinary evening.

I am truly thankful tonight for the love and support of my family and friends, particularly as I start this new chapter in my life.
