What to do with the left-overs?

My mom used to make this with Thanksgiving or Christmas leftovers when I was little. Since a guest surprised us with a fantastic ham to pair with our Thanksgiving turkey yesterday, this has black-friday dinner written all over it. 🙂 Enjoy.

Swiss Turkey Ham Bake

2 tablespoons butter

½ cup chopped onion

2 cups sliced fresh mushrooms

2 tablespoons all-purpose flour

½ teaspoon salt

½ teaspoon pepper

1 cup half and half (or milk)

¼ cup dry sherry or white wine

1 C cubed cooked ham

2 cups cooked turkey cubed

1 5 oz can water chestnuts sliced thin

½ cup shredded Swiss cheese

1 ½ C bread crumbs

3 tablespoons butter melted

Preheat oven to 400º.  Sauté onion and mushrooms in 2 tablespoons of butter. Blend in flour and add salt and pepper.  Add cream and sherry.  Cook and stir until thickened. Add ham, turkey and water chestnuts.  Pour into a 1 ½ qt baking dish.  Top with cheese.  Mix bread crumbs with melted butter and sprinkle over casserole.  Bake for 25 minutes, until lightly browned.  Makes 6 servings.
