Happy Thanksgiving

I love Thankgiving! The standard core of Thanksgiving food, Turkey, dressing, mashed potatoes, gravy, green beans and corn are among my family’s favorites. When my kids were younger and I worked too many hours one of our favorite meals was the 15 minute Thanksgiving. I bought turkey breast cutlets, Stovetop stuffing, Bob Evan’s mashed potatoes, a jar of gravy, Green Giant canned greenbeans and Niblets corn. I sauteed the turkey cutlets, adding the gravy to the pan after the turkey was cooked, made the Stovetop stuffing and heated everything else in the microwave.

While nothing can compare to the aroma of a slow roasting Turkey or a pumpkin pie baking, the 15 minute Thanksgiving was festive in its own way and gave us a little reminder of one of our favorite holiday meals in the middle of an otherwise ordinary evening.

I am truly thankful tonight for the love and support of my family and friends, particularly as I start this new chapter in my life.
